Amish Baked Chicken

This dish is the bomb!

1/2 cup flour
2 teaspoons paprika
1 teaspoon pepper
1/4 teaspoon dry mustard
1 teaspoon salt
1 cut up broiler chicken or chicken tenderloins 
1/4 lb butter


Mix the dry ingredients well in a plastic bag, then coat the cut up chicken parts with the mixture.

In a baking dish, melt the butter. 

Place the chicken parts in the pan, but do not crowd them. 

Bake the chicken at 350 degrees for 1 hour or until done.

Homemade Macaroni & Cheese

Ummmm....homemade mac & cheese from scratch. What could be better? Not much except for the Amish Chicken I will be making with it! Try this and you will never go back to a box version again. It is a lot easier than you think...and Oh...so....good..

~ Start with cooking 2cups of macaroni noodles according to the directions on the box, drain & set aside.
 ~ Melt 4-5 tablespoons of BUTTER in pan...(did you hear me? I said butter, not margarine which is one molecule away from being plastic!) {{gag}} 

~ Stir in 1/4 cup flour, 1/2 tsp. of salt and a dash of black pepper. Blend till smooth. Gradually whisk in 2 cups of milk.
~ Bring to a boil, cook and continually stir for about 1 minute or till nice and thick. (Do not omit this or it will taste "floury.")
~ Add 2 1/2 cups of shredded Sharp Cheddar Cheese.
~ Continue cooking and blending till melted.
~ Make sure heat is reduced. Stir non-stop so that mixture does not burn.
~ Add drained macaroni to cheese mixture & mix well.
~ Transfer to a GREASED 2 1/2 quart baking dish.
~ Sprinkle the top with crushed potato chips or Ritz Crackers. (I like the salty taste of the chips best :)
~ Bake uncovered at 350 degrees for 25-35 minutes or till bubbly and heated thoroughly.

Now that's one Blooming Good Onion!

Baked Blooming Onion

"Onions are a sweet and healthy vegetable option. You may not be able to go to Outback and afford 2000 calories on this scrumptious appetizer, but this is a healthy alternative and is BLOOMIN' good & will blow you away! Be sure to use red onions for added sweetness."

Ingredients

• 1 red onion

• 1/4 cup Panko bread crumbs

• 1/2 teaspoon garlic powder

• 1/4 teaspoon paprika

• 1 egg white (beaten slightly)

Instructions

1. Cut the red onion 3/4 of the way down as many times as possible.

2. Combine crumbs, garlic, paprika and egg white.

3. Drizzle this over the onion, spray with olive oil if desired.

4. Bake at 375 degrees F for 40-50 minutes.


Spicy Dipping Sauce:

3 tbsp cottage cheese (put in blender until smooth)
1 tbsp mayonnaise
1/8 tsp horseradish
1/4 tsp cayenne pepper
salt & pepper

Mix and serve with onion.
